Vegan avocado and cucumber gazpacho

A paleo Canapé/Starter for those hot summer evenings. crisp fresh and raw.
Ingredients
1 English cucumber
1 yellow bell pepper
3 yellow tomatoes
¼ small white onion
1 ripe avocado
1 cup vegetable stock (or just use water to make it 100% raw)
2 tsp apple cider vinegar
1 tsp freshly squeezed lime juice
2 tbsp extra virgin olive oil
1big handful of fresh coriander
1 clove garlic
1 red chili finely chopped
1 tsp salt
