Vegan Bean chili.

Vegan quick home cooked dinner, bake bean, vegetable, mushroom chilli with spinach and garlic. Dumped all over crispy jacket potato’s with melted vegan cheese. £2.50 for 2 people.
4 x baking potatoes
pierce with a fork and bake on 180dc for 60 mins
1 x bunch of broccoli (half finally diced /half rough chopped
4 cloves garlic (smashed)
1 onion (rough chopped)
2 large field mushrooms (foraged if possible)
250g spinach (baby and whole and cleaned)
1 x tin of baked beans
250m water
veg stock to taste
cumin
paprika
chilli
coriander
salt/pepper
(all to taste, I make mine hot and spicy but you can make it mild or leave out the coriander in exchange for parsley )
Fry broccoli, garlic, onion, mushroom all together till soft then add herbs and seasonings.
Then add water, stock and beans and bring to a quick simmer for 4 minutes then on a low dry heat for a further 15 minutes at least slowly adding the spinach (the longer the simmer the better the taste as it infuses the flavours together, just add more water if drying out.)
A splash of bbq sauce or sweet chilli sauce would give it more depth but its your call ! just see whats in the cupboard.
Finally dump the chilly all over your jacket potatoes and smother with vegan smoky cheese.
very cost effective and if your felling brave just add any of your other leftover veg from your fridge to reduce waste !
a winters meal for £2:50 for two people and no animal died to make it !
